Not sacrificing the original recipes of Johorean cuisine, Selasih looks at health and at options of replacing ingredients that are fresher, healthier and using methods of cooking that seals in natural juices and nutrients. The food served is geared towards less cholesterol and less fat. In line with this principal, steps are being taken to use healthy oils such canola oil and other fats high on beneficial elements such as Omega-3 and the replacement of coconut milk and ghee with low fat milk and yoghurt.
